Ground-Pork Roll
Looking for a simple recipe that is very gourmet? Look no further than this Ground-pork Roll. Stuffed with anything you could imagine, this meal can be fun or posh, whatever you and your ingredients decide.

INGREDIENTS
2 lbs. of ground pork
Napoleon® Chicken and Rib Rub
2 tbsp. oil
1 tbsp. italian seasoning blend
6 asparagus shoots, washed and trimmed
1 red pepper, washed, seeded and sliced
6 mushrooms, washed and sliced
6 slices of swiss cheese
cedar plank, optional
METHOD
Soak your wooden plank for 1 to 24 hours if you have chosen to use a plank instead of a metal baking sheet.
Preheat your grill to 375°F.
Wash and slice your vegetables. Combine all vegetables in a bowl and toss with the oil and Italian seasoning.
Lay out a plastic sheet big enough to hold the ground pork. Spread the pork so that it is in a 1-inch thick rectangle. Sprinkle with the Rib Rub, use as much or as little as you want.
Lay the veggies out in the middle of the pork, in a line. Add the swiss cheese. Using the edges of the plastic wrap, roll the pork so that it kind of makes a meatloaf.
Slide the loaf, plastic wrap and all onto the baking sheet or plank and put on the grill for 5 minutes. This is so that the meat will gell together and not crumble. Remove the plastic wrap after 5 minutes. DO NOT FORGET THIS STEP!
Grill roast the pork for 30 minutes or until an instant read thermometer reads 160°F. Serve.
